Quinta de Couselo Rosal 2022 comes from its own vineyards (8 hectares) and leased farms under technical control of the winery. Its production comes from rigorous control in the vineyard with manual harvesting in 15Kg boxes. Immediate transport to the winery where the grapes are subjected to temperature control by placing them in a cold room at a controlled temperature of 5º. Selection on a vibrating table cluster by cluster. Destemming and maceration of whole grapes before pneumatic pressing for 2 hours. Separation of musts. Static desludging. Fermentation at controlled temperature. Aged on fine lees for 6 months.
