Manual harvest of grapes exclusively from A Viñoa. The harvest is done in the mornings looking for the best temperature. It is transported to the winery where it is placed in a cold room at a controlled temperature of 5º. The grapes are processed by passing them through a vibrating selection table. The grapes are subsequently destemmed and macerated before pressing, in the case of the 2018 harvest, for 2.5 hours. Pressing at low pressure selecting the must that is settled by gravity. Alcoholic fermentation takes place at a controlled temperature in stainless steel tanks. It is then aged on its fine lees for seven months. Finally Finca Viñoa 2017 was bottled in May 2018.
